Grain free pea, feta & zucchini fritter recipe


What you need:

  • 4 zucchinis
  • 1 cup of defrosted  peas
  • 1 cup of  chopped parsley
  • 1 bunch chopped mint
  • 1 cup of almond meal*
  • 3 eggs
  • 50-100g of soft feta**
  • Sea salt & pepper
  • A lemon, for serving
  • Coconut oil, for cooking


What you need to do:

  • Grate the zucchini into a colander and rest for 10 mins before squeezing all the excess liquid out
  • Place the grated zucchini in a bowl with the other ingredients and mix through and create small balls of the mixture in your hand to create palm sized patties
  • Place a teaspoon of coconut oil in a non-stick pan on medium and then place the patties onto the pan and cook for 5-8mins or until golden brown on each side.


*Coconut flour can be used as a substitute

**Feta can be removed to make the dish diary free

Here are some serving suggestions for you delicious little fritters:

  • Avocado, cherry tomatos and lemon
  • Bacon bits and a poached egg (as pictured)
  • Using it as a patty in a vegetarian burger.
