Healthy Lasagne Recipe....

I love Italian food, I think that anyone who doesn't it crazy or lying. But I understand that when trying to eat light and clean, pasta doesn't go hand in hand... wrong! This recipe is a super healthy, low calorie option that allows you to have the best of both worlds - delicious comfort food with a fraction of the fat. This recipe is suitable for 6 servings, because we all know lasagne taste better the next day!
What you need:
  • 300g lean beef mince
  • 4 garlic cloves crushed
  • 1 can of tomato soup
  • 1 cup water
  • 250g tomato paste
  • Small tub of ricotta
  • 150g fresh spinach
  • 3 fresh lasagna sheets
  • Hand full of fresh basil
  • Parmesan

What you need to do:

Brown the mince in a large saucepan and add the minced garlic, tomato soup, half a cup of water and 150g of tomato paste and bring the pot to the boil. Reduce to a simmer, cover and leave it to simmer for 30 mins, until the sauce has thickened.

Preheat the oven to 180C fan-forced. Beat the cottage cheese in a large bowl with wooden spoon until it is as smooth as silk then add the spinach and the meat sauce and mix until combined.

In a lasagna dish, spread a small amount of the meat/spinach sauce on the bottom, then place a sheet of lasagne on top, repeat until all 3 sheets are finished.

Combine the basil with the remaining tomato paste and water and pour it over the top of the lasagna and sprinkle with grated parmesan, then bake for 30 minutes.

Then, most importantly, enjoy your guilt free, low calorie lasagne.... Blessimo!
